Ingredients:
- 1.5 cups basmati rice
- 3 cups chicken broth
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder (optional)
- Salt, to taste
- 2 cups cooked and shredded chicken
- 1/2 cup frozen peas
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 2 tablespoons ghee (optional)
- 1/2 teaspoon saffron (optional)
Instructions:
- Rinse the rice in cold water and set aside.
- In a pot, bring the chicken broth to a boil and add the rice. Reduce the heat to low, cover the pot, and cook the rice for about 15-20 minutes or until the water is absorbed and the rice is cooked.
- In a separate pan, heat the oil over medium heat. Add the onion and cook until it is golden brown.
- Add the ginger paste, garlic paste, turmeric, cumin, coriander, garam masala, and chili powder (if using) to the onions and cook for 1-2 minutes.
- Add the cooked and shredded chicken to the pan and stir to coat it with the spices.
- Add the peas, cilantro, and mint to the pan and stir to combine.
- In a small bowl, mix together the ghee and saffron (if using).
- Spread the cooked rice over the chicken mixture in the pan and drizzle the ghee and saffron mixture over the top.
- Cover the pan and cook over low heat for an additional 10-15 minutes or until the flavors have melded together.
- Serve the biryani hot, garnished with additional chopped cilantro and mint if desired. Enjoy!
