How to Make indian style Pongal?


Pongal is a traditional rice dish from South India. Here is a recipe for making it:

Ingredients:

  • 1 cup raw rice
  • 1 cup water
  • 1 cup milk
  • 1/2 cup green moong dal (split green gram)
  • 3 cups water
  • 1/4 cup ghee
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 3 dried red chili peppers
  • 1 tablespoon chopped fresh ginger
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh curry leaves
  • 2 tablespoons chopped cashews
  • Salt, to taste

Instructions:

  1. Rinse the rice and add it to a pot with 1 cup of water. Bring the water to a boil, reduce the heat to low, and simmer the rice until it is cooked and the water is absorbed, about 20 minutes.
  2. While the rice is cooking, rinse the green moong dal and add it to a separate pot with 3 cups of water. Bring the water to a boil, reduce the heat to low, and simmer the dal until it is soft and cooked, about 20-30 minutes.
  3. When the rice and dal are both cooked, add the dal to the pot with the rice and stir to combine. Add the milk and a pinch of salt to the pot and stir to combine.
  4. In a separate pan, heat the ghee over medium heat. Add the cumin seeds, mustard seeds, and dried red chili peppers to the pan and cook until they begin to sizzle.
  5. Add the ginger, cilantro, curry leaves, and cashews to the pan and cook for 1-2 minutes.
  6. Pour the tempering mixture over the rice and dal mixture and stir to combine.
  7. Serve the pongal hot, garnished with additional chopped cilantro if desired. Enjoy!
