Pongal is a traditional rice dish from South India. Here is a recipe for making it:
Ingredients:
- 1 cup raw rice
- 1 cup water
- 1 cup milk
- 1/2 cup green moong dal (split green gram)
- 3 cups water
- 1/4 cup ghee
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 3 dried red chili peppers
- 1 tablespoon chopped fresh ginger
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh curry leaves
- 2 tablespoons chopped cashews
- Salt, to taste
Instructions:
- Rinse the rice and add it to a pot with 1 cup of water. Bring the water to a boil, reduce the heat to low, and simmer the rice until it is cooked and the water is absorbed, about 20 minutes.
- While the rice is cooking, rinse the green moong dal and add it to a separate pot with 3 cups of water. Bring the water to a boil, reduce the heat to low, and simmer the dal until it is soft and cooked, about 20-30 minutes.
- When the rice and dal are both cooked, add the dal to the pot with the rice and stir to combine. Add the milk and a pinch of salt to the pot and stir to combine.
- In a separate pan, heat the ghee over medium heat. Add the cumin seeds, mustard seeds, and dried red chili peppers to the pan and cook until they begin to sizzle.
- Add the ginger, cilantro, curry leaves, and cashews to the pan and cook for 1-2 minutes.
- Pour the tempering mixture over the rice and dal mixture and stir to combine.
- Serve the pongal hot, garnished with additional chopped cilantro if desired. Enjoy!
