Here is a recipe for making South Indian-style prawn gravy:
Ingredients:
1 pound prawns, shelled and deveined
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 dried red chili pepper
1 small onion, finely chopped
1 tablespoon ginger paste
1 tablespoon garlic paste
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder (optional)
Salt, to taste
1 cup coconut milk
1/2 cup water
1/4 cup chopped fresh cilantro
Instructions:
Heat the oil in a pan over medium heat. Add the mustard seeds, cumin seeds, and dried red chili pepper to the pan and cook until they begin to sizzle.
Add the onion to the pan and cook until it is soft and translucent.
Add the ginger paste, garlic paste, turmeric, cumin, coriander, and chili powder (if using) to the pan and cook for 1-2 minutes.
Add the prawns to the pan and cook until they are pink and cooked through, about 2-3 minutes per side.
Add the coconut milk, water, and a pinch of salt to the pan and stir to combine. Bring the mixture to a boil and reduce the heat to low. Simmer the prawns in the gravy for an additional 5-10 minutes or until the flavors have melded together.
Stir in the cilantro and serve the prawn gravy hot, with rice or roti on the side. Enjoy!
