Here is a recipe for a simple mutton leg soup:
Ingredients:
1 mutton leg, cut into small pieces
2 liters water
1 onion, chopped
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon ginger
1/2 teaspoon allspice
2 tablespoons olive oil
1 cup chopped vegetables (such as carrots, potatoes, and bell peppers)
Instructions:
In a large pot, combine the mutton leg, water, onion, garlic, salt, pepper, cumin, coriander, paprika, turmeric, ginger, and allspice. Bring to a boil over high heat.
Reduce the heat to low and simmer for 1 1/2 hours, or until the mutton leg is tender.
Remove the mutton leg from the pot and set aside. Strain the broth through a fine-mesh sieve and discard the solids.
In a separate pan, heat the olive oil over medium heat. Add the chopped vegetables and cook for 5-7 minutes, or until tender.
